The Food
Poached Pear with Sauternes
Serves 4
Ingredients
4 conference pears peeled and cored
Half bottle sauternes wine
Small piece fresh ginger, peeled and sliced
Method
1 Place the pears and ginger in a pan
2 Pour on the sauternes and bring to the boil
3 Cover with a tight fitting lid.
4 Simmer for 10 to 15 minutes or until the pears are cooked through.
5 Remove the pears and keep warm
6 Reduce the wine so a syrup and remove the ginger.
7 Place the pear on a dessert plate and drizzle the sauternes syrup over the pear.
8 Serve with double cream.
Garnish
Serve with the same sauternes wine that you cooked the pears in.
